Pastry Chef Role
The Pastry Chef is a creative and operational leader responsible for driving the vision of all pastry and bakery programs on property—including dining outlets, weddings, banquets, and special occasions. This position requires a hands‑on approach, balancing artistry with operational oversight to deliver memorable desserts and pastries while maintaining consistency and efficiency. Working directly with the Executive Chef, Food & Beverage leadership, and Events, this role ensures that pastry production embodies Hyatt’s quality commitment, Alila’s sustainability philosophy, and the property’s locally inspired culinary direction. This is a full‑time, on‑site opportunity at Ventana Big Sur, and visa sponsorship will be considered for candidates who meet qualification standards.
Primary Responsibilities
Menu Creation & Culinary Excellence
- Develop seasonal pastry concepts that highlight locally sourced and environmentally sustainable products
- Produce breads, cakes, plated desserts, and specialty items for both outlets and events of varying scales
- Innovate through design and flavor, incorporating forward‑thinking culinary trends while maintaining brand consistency
- Guarantee that quality, taste, and presentation meet luxury standards
Operational & Financial Management
- Organize production schedules and staff assignments to meet daily and event demands
- Direct purchasing, inventory, and cost controls to achieve operational and financial targets
- Uphold hygiene, safety, and HACCP compliance throughout all pastry production areas
- Use kitchen and administrative systems for ordering, reporting, and scheduling
Team Leadership & Cross‑Functional Collaboration
- Recruit, mentor, and inspire pastry team members, focusing on technical mastery, creativity, and professional development
- Partner with banquet, culinary, and service teams to successfully execute menus across multiple outlets and functions
- Contribute ideas and planning in interdepartmental meetings focused on continuous improvement
- Represent the pastry program in select guest‑facing experiences such as demonstrations or tastings that align with the resort’s ethos
Compensation & Benefits
- Salary: 70,000–70,000–80,000 annually, commensurate with qualifications and experience

Qualifications
- At least 3–5 years of progressive pastry leadership within luxury hotels, resorts, or fine dining
- Formal culinary or pastry education preferred
- Proven technical expertise and presentation skills in both classic and innovative pastry techniques
- Capable of managing multiple outlet productions and high‑volume events simultaneously
- Strong grounding in cost control, purchasing practices, and inventory management
- Computer literacy, especially in Microsoft Office and kitchen management software
- Creative use of seasonal and local ingredients in menu development
- Strong collaboration and communication skills; thrives in a team environment
- Poise and performance under tight timelines
Physical & Other Requirements
- Ability to work standing in high‑heat kitchen conditions for extended periods
- Able to lift and carry up to 50 pounds
- Manual finesse and visual precision for detailed pastry work and plating
- Reliable transportation and a valid driver’s license for commuting to Big Sur
- Willingness to work a flexible schedule, inclusive of mornings, evenings, weekends, and holidays
